Today I decided to cook steaks in the oven seasoned with pepper and thin slices of garlic.
Many of you will be thinking, "oh my god garlic?! the Salmon?", "... but not too sovrasterà the delicacy of the salmon ?"... Indeed, any doubts I had it too, but then I thought it cut into thin sheets, and private soul united to the freshly ground black pepper would help "grease" the salmon and to enhance its sensitivity.
... in fact, the evidence shows that the feeling is this. What do you think?
In combination, as a side dish, I made the scoop of mashed potatoes flavored with orange. I chose the combination of garlic and orange to enhance the flavor of the salmon and, at the same time, accompanied by a fragrant connotation.
Ingredients:
- a fresh salmon fillet, skinned
- a clove of garlic, finely sliced \u200b\u200b
- freshly ground pepper
- potatoes
- a knob of butter, grated Parmesan

- grated orange peel
- milk

salt to taste Method:
First, prepare the mashed potatoes by Boil the potatoes with the peel starting from cold water. When cooked, the drains, peeled and helping with a potato masher to crush in a saucepan. We add the butter, Parmesan, salt and grated orange peel. Stir and put back after the fire start adding the milk. We continue to stir until mixture is smooth and not lumpy.
Meanwhile take the salmon fillet, laying it down on a baking sheet lined with parchment paper, pepiamo and distribute the slices of garlic on the thread. Bake in oven at 180 until cooked, being careful not to burn the garlic slices.
When the salmon is cooked, place it on the plate and the pure forms of piccole quenelle.
In abbinamento, oltre al classico vino bianco, che in questo caso preferirei leggermente mosso e con note minerali e acidule così da pulire il palato, vi propongo una birra rossa, non eccessivamente carbonata (poca schiuma), dal sapore fresco e leggermente amaro, con la giusta persistenza al palato tale da non sovrastare il sapore del salmone ma da contrastarlo lievemente tra un boccone e l'altro.
Come musica di sottofondo, invece, vi suggerisco un brano di Renato Zero che è 'Il Triangolo'.
